Making Healthier Food Choices - Recipes and Tips

Simon and I have been eating quite a bit of meat recently, it’s left me with a bit of a heavy feeling so I’m looking forward to lightening things up for a little while. Sometimes I really crave healthy, veggie food and my fridge is currently full of lots of lovely fresh ingredients right now, which isn’t always the case!

On days where I need a little help, I turn to healthier snacks that I can grab and go. As a working mum with a one year old, I need to be able to make a quick decision that isn’t always chocolate biscuits (although, it’s always good to treat yourself from time to time!). A great new discovery for me is the new Veggie Sticks range from ZENB.

The Red Pepper is definitely my favourite and I’ve been crumbling it onto my salads this week. Here’s how I’ve been enjoying mine this week. 

Day 1 - First up I ate one of the Beetroot Veggie Sticks for my 11am snack.

Day 2 - I crumbled the Pumpkin Veggie Stick over my muesli. I usually have a quick bowl of cereal in the morning so this made it a bit different.

Day 3 - Time for lunch and the sun was out that day. I topped my hot smoked salmon salad with the Red Pepper Veggie Stick.

Day 4 - It was time for an afternoon snack so I crumbled the Beetroot Veggie Stick on the top of some Greek yoghurt and honey.

Day 5 - Finally I grabbed one of the Veggie Sticks for a post run snack as exercising always makes me really hungry.

I've also collected some great veggie recipes from some absolutely amazing food blogs to inspire me to make more healthy choices. I find lunch time quite hard as it’s far too easy to snack if I'm busy working or running after Peggy! I hope you enjoy these recipes too.
