A Simple Scandi Supper
During the warmer months, there's nothing better than preparing a simple meal to enjoy in the long evenings. Some of my favourite meals to have at home are made up of lots of small dishes. I whipped up a few Scandinavian style salads for Simon and I to have tonight, it was lovely to dish everything up in pretty plates and Simon brought home some delicious cinnamon buns from Fabrique to have for dessert.
The folks over at Villeroy & Boch set me the challenge to style up their new Colourful Life collection so I decided to prepare a pretty supper for Simon and I to enjoy. I think the table ended up looking really lovely, the grey, blue and yellow ceramics all compliment each other really well. Being a boring person I love the grey most of all! I'd say I ended up creating a sort of Swedish Fika, a wonderful concept in Scandinavian culture which means "to have coffee", often accompanied with pastries and lots of chatting.
One of our favourite things to treat ourselves to are cinnamon or cardamon buns, they are so delicious with coffee. If you manage to hunt down a legit scandi bakery near you I'm sure you'll become addicted like we have! I didn't think that a few cinnamon buns on their own would do the trick for dinner though, so I made a few salads too. Here are the recipes:
Beetroot and Apple Salad
2 beetroots, peeled and cut into small cubes
1 apple, cut in small cubes
1 tbsp olive oil
1 tbsp cider vinegar
2 tbl of plain yogurt
salt and pepper to taste
Preheat your oven to 200 c. Clean and chop up the beetroots, coat them in olive oil and roast in the oven for around 20-30 minutes until they're tender. Once they've cooled off simply mix everything together in a bowl and serve with chopped dill.
Färskpotatissalad aka Swedish Potato Salad
500g new potatoes, scrubbed but not peeled
225ml crème fraîche (or sour cream)
4 tablespoons mayonnaise
large bunch of fresh dill (finely chopped)
Boil the new potatoes in salted water until just soft, drain them and when they are cool enough to handle, cut them into small chunks.

4 finely sliced radishes
large bunch of fresh dill (finely chopped)
Boil the new potatoes in salted water until just soft, drain them and when they are cool enough to handle, cut them into small chunks.
Mix the crème fraîche with the mayonnaise and freshly chopped dill and fold the cooked potatoes into the mixture. Chill the potatoes before mixing in the dressing. Top with the sliced radishes.
Serve both the salads with smoked salmon, or gravlax, rye bread, pickled cucumbers and lots of dill!
